These wonderful blends were originally created for there own pepper jelly & mustard recipes. When they found the supplier of the "test tubes", they decided to offer these specialty blends to their customer. They are robust and full bodied, but are not HOT (except of course, the cajun!!)...the "heat" can be tailored separately, regardless of how much spice is used!!! So, feel free to go wild with them, the heat is a whole other component!! For those who appreciate "heat" with their spice, they suggest cayenne pepper, crushed chillies, authentic Thai/Vietnameses chilly sauce (be carefull of brands such as Tabasco - they tend to be very vinegary and will alter the flavour profile of your dishes).
