Raspberry Lemon Squares

Ingredients:
- 1¾ c plus ⅓ c all purpose flour
- ½ c icing sugar
- ½ tsp salt
- 2 sticks chilled unsalted butter
- 1 tsp ice water (if needed)

- 1 c Greaves Raspberry Jam or Raspberry Fruit Spread
- 2 c sugar
- 2 tsp grated lemon zest
- 4 eggs, beaten
- ¾ c lemon juice, fresh

Directions:
- Preheat oven to 350°F. Butter a 9x13" baking pan.
- Place 1¾ cups of flour, icing sugar and salt in food processor, pulse to blend. Add the butter and process until dough comes together, add ice water if necessary.
- Press dough evenly into prepared pan. Bake about 20 minutes until crust is golden.
- Let cool for 30 minutes and spread Greaves Raspberry Jam evenly over base.
- In a bowl, mix together sugar, the remaining ⅓ c flour and lemon zest. Crack eggs into new mixing bowl. Using electric mixer slowly add flour mixture, mixing until well blended 1-2 minutes. Add in lemon juice and mix well.
- Pour lemon mixture carefully over Raspberry Jam layer taking care not to separate the layers.
- Bake 25-30 minutes just until the lemon topping is set. Let cool in pan.
- Dust with icing sugar and cut into squares with a serrated knife.
- Store in air tight container keeping cool until ready to serve.
Makes 24 squares.
