Jam Thumb Print Cookies

Ingredients:
- ¾ lb softened butter, or 3 sticks
- 1 c sugar
- 2 egg yolks
- 3-¾ c all purpose flour

- ¼ tsp salt
- 1 tsp vanilla extract
- Greaves Jam - Plum or Apricot (or your favourite)

Directions:
- Pre-heat oven to 350°F
- Cream butter & sugar. Beat in egg yolk.
- Sift flour & salt, then blend into butter mixture.
- Add vanilla extract.
- Shape into 1" balls and place on ungreased cookie sheet. Make indent in centre of each cookie with thumb.
- Fill with Greaves Plum or Apricot Jam.
- Bake in oven for 15 minutes or until lightly browned.
- Cool slightly before removing to rack to finish cooling.
- Store in air tight container.
