Marinated Pork Roast with Black Currant Jelly Sauce

Ingredients:
Marinade
- 4-5 lb pork loin roast, boned & rolled
- ½ c soy sauce
- ½ c sherry
- 2 cloves garlic, minced
- 1 tbsp dry mustard
- 1 tsp ginger
- 1 tsp thyme, crushed

Sauce
- 1 c Greaves Black Currant Jelly
- 1 tbsp soy sauce
- 2 tbsp sherry

Directions:
- Place roast in plastic resealable bag. Mix soy sauce, sherry, garlic, mustard, ginger and thyme and pour over meat. Marinade for 5 hrs or overnight.
- Remove from plastic bag and place roast in roasting pan and pour marinade over roast.
- Roast in pre-heated 325°F oven uncovered for 2½-3 hours basting frequently.
- Remove roast from oven and let rest before carving.
- To make sauce, combine black currant jelly, soy sauce and sherry in a small, sauce pot and heat for about 2 minutes.
- Arrange sliced meat on platter and pour some sauce over it, reserving remaining sauce to serve with meat.
